CURRY ketchup

2 tablespoons olive oil
1 medium yellow onion, chopped
4 cloves garlic, chopped
1 tablespoon tomato paste
1 tsp sea salt
1 tablespoon ground yellow curry
1 tsp ground mustard
1/2 tsp crushed red pepper flakes
1/2 tsp smoked paprika
1/4 tsp allspice
Large pinch of ground cloves (2 pieces)
approx 800 ml crushed tomatoes
1/2 cup brown sugar
1/4 cup apple cider vinegar
Heat olive oil over medium heat in a small to medium saucepan. Sauté onions until soft and begin to brown after about 6 to 8 minutes. Add garlic and sweat, about a minute. Add tomato paste, salt and all spices and stir until they are all evenly mixed. Simmer for another minute. Add crushed tomatoes, sugar and vinegar. Simmer uncovered, over low heat for about 45 minutes, stirring occasionally. Remove from heat and blend with a hand blender until smooth.

Healthy ketchup

200g tomato paste (from 100% tomatoes)
¾ cup water
2 tablespoons raw, unfiltered apple cider vinegar
2 tablespoons raw honey
½ teaspoon crystal or sea salt
1 onion chopped
2 pinches allspice
2 pinches cloves
a little garlic and/or chili to taste

Place all ingredients (except honey) in a medium saucepan and bring to a boil, stirring. Simmer the ketchup over low heat, stirring occasionally, for 20 minutes (With lid on pot!). Towards the end, add the raw honey.
